Bavarian Potato Salad

A cold potato salad inspired by Bavaria.

    Ingredients

    For 10 servings:

    • 2 kg Potato Slices 6 mm
    • 2 vegetable stock cubes
    • 300 g bacon in cubes or strips
    • 2 onions
    • 50 ml vinegar
    • 100 g sugar
    • 1 tablespoon mustard
    • Oil
    • Parsley
    • Pepper
    • Salt

    Preparation

    Frying Pan
    middle temperature, 5 + 3 minutes
    1. Dice the onions and sauté in a pan with the bacon.
    2. Add the sugar and allow to caramelise briefly.
    3. Deglaze with vinegar and bring to the boil briefly.
    4. Add the stock cube and boil down.
    5. Place the Potato Slices in a pan and pour in the bacon stock.
    6. Heat briefly but do not bring to the boil.
    7. Add the mustard and season with pepper and salt.
    8. Leave the salad to cool and garnish with chopped parsley.
    Top
