A Buddha bowl with Potato Gratin and pulled chicken!

    Ingredients

    For 2 servings:

    • 800 g Potato Gratin Deluxe
    • 300 g grated carrots
    • ½ avocado
    • Coriander
    • Sriracha mayonnaise
    • Pulled Chicken:
      -    600 g filleted chicken thigh
      -    1 onion
      -    2 cloves of garlic
      -    1 tablespoon paprika powder
      -    ½ tablespoon caraway
      -    1 chicken stock cube
      -    200 ml light beer
      -    100 ml barbecue Sauce
      -    1 tablespoon tomato purée

    Preparation

    Oven
    Chicken: 150 °, 1.5 Stunden
    Oven
    Potato gratin: 220 °C, 20-25 minutes
    1. Pre-heat the oven to 150 °C.
    2. Finely dice the onion and garlic and place in a pan with a lid.
    3. Finely chop the chicken fillet and pepper.
    4. Place the chicken, pepper, caraway, chicken stock, beer, barbecue sauce, tomato purée and a little salt in the pan.
    5. Place the pan with lid in the oven for approx. 1.5 hours. The chicken is cooked when it can be pulled apart easily.
    6. Leave the chicken on the hob over a low heat to keep it warm and in the meantime increase the oven temperature to 220 °C.
    7. Place the Potato Gratin in a casserole dish and cook in the oven for 20 to 25 minutes.
    8. Serve the Potato Gratin in a bowl with the chicken, avocado and carrots. Garnish with coriander and sriracha mayonnaise.
