Potato Soup with Ham and Salmon

Quick and easy to prepare creamy potato soup with ham or salmon topping!

    Ingredients

    Serves 6–8:

    • 2 kg Potato Gratin Deluxe
    • 3 l chicken or vegetable stock
    • 600 g ham in strips or 400 g smoked salmon in strips
    • 1 bunch of chives

    Preparation

    Cook
    ca. 10 minutes
    1. Place the Potato Gratin in a large dish with 3 l of stock.
    2. Stir well and simmer over a medium heat for 10 minutes.
    3. In the meantime, chop the chives.
    4. Purée the potato soup with a hand blender.
    5. Serve the soup in bowls and garnish with the strips of ham or smoked salmon.
    6. Sprinkle with the chopped chives.
