Potato Curry

Vegetable and potato stew in a tasty spicy curry sauce.

Vegetarian!

    Ingredients

    Serves 10:

    • 2 kg Potato Cubes
    • Curry paste to taste
    • 1 red chilli pepper
    • 3 red peppers
    • 2 heads of pak choi
    • 2 onions
    • Coconut milk or single cream to taste

    Preparation

    Frying Pan
    middle temperature, 15 minutes
    1. Finely chop the vegetables and sauté in a pan.
    2. Add some butter or oil to a large pan and lightly fry the Potato Cubes.
    3. Add the vegetables to the Potato Cubes.
    4. Add curry paste to taste and sauté briefly to let the spices develop.
    5. Add the coconut milk or single cream to form a creamy mix.
    6. Bring to the boil and reduce briefly to a creamy consistency.
    7. Suggestion: serve with naan bread.
    Top
