Potato Tortilla

A tasty Spanish potato omelette with chorizo and cheese.

    Ingredients

    Makes 12:

    • 2 kg Potato Cubes 12 mm
    • 2 onions
    • 200 g chorizo
    • 200 g grated cheese 
    • 10 eggs

    Preparation

    Oven
    150°C, 25 minutes
    Frying Pan
    ca. 12-14 minutes
    1. Pre-heat the oven to 150 °C.
    2. Dice the onions and chorizo and cook in a large (oven-proof) pan for 12–14 minutes until golden-brown.
    3. In a bowl, mix the eggs with the grated cheese until smooth.
    4. Add the egg mix to the pan and thoroughly stir through the potatoes once.
    5. Place the pan on the middle shelf of the oven and cook for 25 minutes.
