Spanish-Inspired Gratin

A recipe for anyone looking to eat less meat without compromising on flavour. A good quality Merguez sausage arranged on top of the Potato Gratin lends this dish an interesting Mediterranean flavour.


    Serves 4–6:

    • 2 kg Mediterranean Potato Gratin
    • 400 g cherry tomatoes
    • 100 g spring onions
    • 100 g Merguez sausage
    • Parsley


    200 °C, 20 minutes
    1. Pre-heat the oven to 200 °C.
    2. Thinly slice the spring onions and stir into the Potato Gratin with the cherry tomatoes.
    3. Place the mix in a casserole dish and sprinkle with crumbled or diced Merguez sausage.
    4. Bake the Potato Gratin on the middle shelf of the oven for 20 minutes.
    5. Garnish with parsley.
