Gratin with Forgotten Vegetables

Keen to eat more vegetables but fancy something different for a change?

Why not combine Potato Gratin with grilled parsnip.

    Ingredients

    Serves 4:

    • 700 g Potato Gratin Deluxe
    • 4–6 parsnips
    • 3 tablespoons of pumpkin seeds, roughly chopped
    • 2 tablespoons of sunflower seeds
    • 100 g grated Parmesan
    • 1 egg white
    • Salt
    • Pepper

    Preparation

    Oven
    225 °C, 30 + 10 minutes
    1. Pre-heat the oven to 225 °C.
    2. Halve the parsnips lengthways and place in a casserole dish.
    3. Add oil, salt and pepper and bake in the oven for 30 minutes.
    4. After half the time, add the Potato Gratin to the oven
    5. Mix the seeds with the Parmesan.
    6. Remove the parsnips from the oven and coat with egg white.
    7. Sprinkle seeds and cheese mix over the parsnips.
    8. Return the casserole dish to the oven for 10 minutes.
    9. Serve the parsnips with the Potato Gratin.
